End of Summer Pasta

1 cup olive oil

1/3 Cup Soy Sauce

1/4 Cup Balsamic Vinegar

3 Tbs Dijon Mustard

6 Cloves Garlic

1 Pound Zucchini

2 Red Bell Peppers

2 Portabella Mushroom Caps

1 Red Onion

1 lb dried Penne pasta

1 1/2 Cup freshly grated parmesan cheese

1 1/2 pound boned, skinned chicken breast halves

Salt and fresh ground pepper

1/2 cup slivered fresh basil leaves

Directions:

4. Meanwhile, in a  6-8 quart pan over high heat, bring 4 quarts water to a boil. Add pasta, stir, and cook, uncovered, until barely  tender to bite. 9-13 minutes. Drain

 

5. In a large bowl, mix pasta with remaining 1/3 cup olive oil, parmesan cheese, half chopped vegetables and chicken, and salt and pepper. Top with remaining vegetables and chicken. Garnish with sliced basil.

       Recently Orbit Software team members had the unique opportunity to team up with the TV show “Our Planet” to release feature presentation on “Transportation Solutions for the 21st Century”. 

       Producers worked with OSI as well as seasoned BusBoss users from Great Valley School District to create an inside look into how transportation has evolved from the first school bus in 1827 to today.

Culebra Island is an island off of Puerto Rico. Though I’ve never been there, this is where I wish to go. This island has some of the most beautiful and secluded beaches  in Puerto Rico.

One thing I would most like to do while there is to go scuba diving. There are many other things to do such as snorkeling and jet skiing, however, I prefer to spend my time lounging on the beach and soaking up the sun.

With school back in session we know summer is coming to an end. If you’re anything like me, you’re not ready to say goodbye yet. With that in mind I’ve come up with a few things to do to enjoy the last days of summer.

Have a Cookout In less than a few days, Labor day will be here. That’s a great day to enjoy a cookout with the family. This is an opportunity to use your grill one last time and enjoy the great food with loved ones.

Go to the Beach or Pool Swimming is a summer activity that everyone enjoys. Before it’s too late make time to take one last dip in the water.

Last Minute Weekend Vacation Summer is an ideal time for family vacations and we usually choose to go somewhere we can’t go everyday. Take a weekend and go somewhere nearby that you’ve never gone before.

 

Enjoy the Outdoors Spend time relaxing outdoors. The nice weather won’t be around once winter arrives. Lay out in your yard or on your deck, listen to music, read a magazine and savor the beautiful weather we will miss a month or two down the road.

Eat Fresh Produce Summer is a time when we can enjoy fresh fruits and vegetables. Stop by your local farmers market or produce stand and pick up a few of your favorites before they are out of season.

Attend an Outdoor Sports Event Attend a local sporting event such as a little league game. With school back in session, high school football will begin before we know it. Take an evening to support your hometown sports.

Camp Out In A Tent Spend an evening “rouging it” by camping out. Pitch a tent

 

and sleep under the stars, even if it’s in your own back yard. Build a fire and roast marshmallows. Perhaps even tell a ghost story or two.

Go Fishing Go down to the river or lake and cast your line. Just think, you could reel in a big bass or even have a new story to tell about the big one that got away.

Wear White I’ve heard it said you shouldn’t wear white after Labor Day. Plan your outfits accordingly so you can wear all your white clothes one last time. While you’re at it, enjoy those sandals or flip flops before they retire to the closet for another year.

Visit an Amusement Park or Fair Gather up the kids or grandkids and visit an amusement park or fair. Spend the day riding the rides, playing games, and eating the delicious foods.

Text Box: “Planning for the Future 
while Optimizing the Present”

1. In a bowl, whisk together 2/3 cup olive oil, soy sauce, vinegar, mustard, and garlic. Reserve 1/2 cup marinade for basting vegetables; pour remaining into a 1 gallon zip lock bag. Cut chicken lengthwise into 1-inch wide strips and add to bag. Seal bag and turn to coat. Chill about 45 minutes.

 

2.Meanwhile, rinse zucchini, bell peppers, and mushroom caps. Slice zucchini lengthwise into 1/4 inch thick strips. Stem and seed bell peppers; quarter lengthwise. Peel onion and slice crosswise into 1/4 inch thick rounds. Brush vegetables with reserved marinade.

 

3.Cooking in batches if necessary, lay vegetables and chicken (discard marinade) on a barbeque grill over a solid bed of hot coals or high heat on a gas grill; close lid on grill. Cook, turning once, until vegetables are slightly charred and chicken is no longer pink in center of thickest part, 6 to ten minutes total. Let cool a few minutes. Chop vegetables and chicken into 1 inch pieces.

  Before you know it you’re sitting down for Thanksgiving turkey...

  Then come the major holidays in which you’ll take part in decorating your home to create warm memories for your family  and shopping for all types of gadgets and gizmo’s.

  Why not take time this fall to alleviate some stress by clearing out the clutter in your home?

  How many of you went down to the basement, out to the garage or storage closet to pull out your decorations from one year to the next, and keep saying to yourself, I really need to get rid of some of this stuff?

  Fall is a great time to organize a yard sale and have a whole family take part.
