Sweet Potato Pound Cake

 

3 Cups flour
2 Tsp baking powder

2 Tsp cinnamon

1 Tsp nutmeg

1/2 Tsp baking soda

1/4 Tsp salt
2 Sticks butter softened
1 1/2 Cup sugar

1/2 Cup brown sugar

1 Tsp vanilla extract

2 Cups leftover mashed sweet potatoes

4 large eggs, at room temperature

3/4 cup chopped pecans

       Recently Orbit Software team members had the unique opportunity to team up with the TV show “Our Planet” to release feature presentation on “Transportation Solutions for the 21st Century”. 

       Producers worked with OSI as well as seasoned BusBoss users from Great Valley School District to create an inside look into how transportation has evolved from the first school bus in 1827 to today.

       The episode of Our Planet will highlight the innovative ways BusBoss Transportation Software, coupled with it’s add-ons such as TRIPpatrol GPS tracking, has allowed users to optimize their transportation departments, producing more efficient routing and a “Greener” district.

Hilton Head is my favorite vacation spot because everything about the island is relaxing.  It's relatively flat, so bike riding is easy and fun.  There are plenty of outdoor activities to keep you entertained.  My favorite activities involve the perfectly manicured golf courses and the dolphin excursions, where you are sure to spot dozens of these amazing creatures.

November is here which means Thanksgiving is just a few days away. It’s a time for friends, family, football, and of course food. Mmmmm Turkey!!! After Thanksgiving dinner you always have a lot of leftovers. So here are ten ideas on what to do with your leftovers.

Turkey Salad - When I was younger my grandmother made the best Turkey salad. It’s quick and simple. Just take the leftover turkey, and add cabbage,  celery, onions, and mayo.

 

 

 

 

 

 

 

 

 

Turkey Lasagna - Take your stuffing and put it on the bottom of a casserole dish, then add in layers the turkey, mashed potatoes, gravy, and top with the green bean casserole. Throw it in the oven for 25 minutes at 350 and you’ll have a dish everyone will enjoy.

Hot Turkey Sandwiches - Use your turkey and gravy to make these and you have a quick and easy lunch.

Thanksgiving Sandwiches - Put your leftover turkey, stuffing, and cranberry sauce between two pieces of toast with some mayo. It doesn’t only look good, but it tastes good.

Turkey and Waffles -  Pile your waffles with turkey and add leftover cranberries for a tart topping.

 

 

 

Shepherd’s Pie - Use your leftover mashed potatoes, turkey, and vegetables to make this hearty casserole.

Twice Baked Stuffed Sweet Potatoes -  Bake whole sweet potatoes until soft, scoop out the inside. Mix with pineapple, oil, butter, sugar, and salt. Stuff mixture in potatoes and bake for 15 minutes.

Fried Potato Cakes - Mix left over mashed potatoes with onions, egg, and corn meal to make delicious potato cakes.

Cranberry Pie - Turn leftover cranberry sauce into a mouth watering pie. Serve with whip cream on top.

Sweet Potato Pound Cake - Use leftover sweet potatoes to make a delightful dessert. (See Seasonal Recipe section)

while Optimizing the Present”

 

Directions:


Preheat oven at 325. Grease two 9-inch loaf pans with baking spray.

In a medium bowl, sift together flour, baking powder, cinnamon, nutmeg, baking soda, and salt.

In a large bowl, mix butter, sugars, and vanilla until light and fluffy. Blend in sweet potatoes, then eggs one at a time. Add flour mixture in thirds. Combine just enough to blend.

Spoon batter evenly into pans. Sprinkle pecans on batter. Bake 70 - 80 minutes. Cool for 15 minutes and serve.

 

With Thanksgiving fast approaching we often start to think about the holiday season. With Thanksgiving only two weeks away I’m already in the holiday mode thinking about Christmas shopping and family dinners.

Aside from that, Thanksgiving has given us a reminder to reflect and think about all that we’re grateful for.
