Sweet Potato Casserole
4 1/2 lbs sweet potatoes 1 cup sugar 1/2 cup butter, softened 1/4 cup milk 2 eggs 1 tsp vanilla extract 1/4 tsp salt 1 1/4 cup cornflakes, crushed 1/4 cup chopped pecans 1 tbsp brown sugar 1 tbsp butter, melted 1 1/2 cup miniature marshmallows
Preheat oven to 400. Bake sweet potatoes for one hour or until tender. Let stand about 20 minutes. Peel and mash. Reduce temperature to 350. Beat mashed sweet potatoes, sugar, softened butter, milk, eggs, vanilla, and salt until smooth. Spoon potato mixture into a greased 11 X 17 inch baking dish. Combine cornflakes, pecans, brown sugar, and melted butter in small bowl. Sprinkle over casserole in diagonal rows 2 inches apart. Bake at 350 for 30 minutes. Remove from oven. Let stand 10 minutes. Sprinkle marshmallows in alternate rows between cornflake mixture. Bake for 10 minutes. Let stand for 10 minutes. Serve and enjoy!

Most of us, at some point learned the history of how Thanksgiving came to be. Here are some interesting facts about the holiday that you may not know. Mary Had a Little Lamb - The author of this nursery rhyme campaigned for almost 20 years, writing letters every year to all the governors asking that Thanksgiving become a national holiday. Lincoln was the one she finally convinced. Thanksgiving Date - President Roosevelt changed the date of Thanksgiving from the last Thursday to the second to last Thursday of the month to boost the economy by extending the Christmas shoping season. In 1942 it was set to the fourth Thursday of November which is sometimes the last week and sometimes the second to last.

First Thanksgiving - The food eaten at the first Thanksgiving included deer, fowl, corn, cod, bass, and other types of fish. Why we eat Turkey - Sarah Hale, the famous woman who helped Thanksgiving become a national holiday also wrote many editorials which included various recipes to be served for Thanksgiving dinner. Why they were called Pilgrims - The first record of the word Pilgrim associating those on the Mayflower was used by William Bradford. Other’s used it in the same sense and it caught on and became popular to toast to the “Pilgrims of Leyden”.
